Step 5 - Piping Perfect Shells
Have sheet pans nearby and ready to use. Place 1/2 inch tip into 16-18 inch piping bag and cut tip. Quickly transfer batter to piping bag. When full, twist bag like a loaf of bread until closed off. Flip bag upside down with tip facing up to "set" your bag. Twist bag until it feels like a fresh and full tube of toothpaste. Make sure the indent between your thumb and index finger is where the twisted part of the bag lays. The palm of your hand should be where the bulky part of the piping bag sits.
Hold piping bag at 90 degrees and about ¼-1/2 inch off mat. Piping in one fluid motion to pipe perfect circle. Be sure not to “dog pile”.*
